Squash with Pariva Yogurt Bites and Pomegranate

Such a beautiful, easy, squash side dish that is so elegant! A definite for the holidays but so easy and simple, you can make it any time!

Ingredients


1 Jar of Pariva Rosemary and Garlic or Tandoori Flavor

1 Squash

Dollop of Butter

Pomegranate


Cut squash in half and scoop out seeds in the middle with a spoon. In a baking tray, arrange the squash. I find it easier to balance if I cut just a thin piece off the ends to make them flat - but be careful not to cut too much off or you will have a hole in the bottom. Or you can also crumple up some foil to make a bed to rest the squash on the baking pan.

Drizzle some of the Pariva Yogurt Bites oils on the squash and in the middle. You can add a dollop of butter too if you want extra decadence! Cover with foil and bake in 350 degree oven for half an hour or until the squash is soft and mushy.

Move squash to a serving platter. Drop in 3-4 Pariva Yogurt Bites and garnish with Pomegranate. Serve warm.

That's it! So easy, it cooks itself (hardest part is keeping the squash from tipping over) and such a beautiful add to the table.
